Okay so I admit these are not the prettiest looking cupcakes - I hold my hands up to that! I like things to look nice and uniform, so for me these aren’t really ticking any boxes. When something looks like this, I end up changing them which more often than not ends up looking even worse :-s
Despite these cakes being no supermodel in the looks stakes they were yummy in the taste stakes. I was originally looking for a recipe with reduced sugar and fat content. My nan is diabetic so I was looking for a suitable cake recipe for her and doing some research and testing. These cupcakes came up in a search as chocolate applesauce cupcakes.
I have never baked with applesauce before but I've heard good things about using it in baking, so thought I would give it a go. It was easy to mix in to the recipe and cooked as per usual cake recipes. The applesauce made the cakes really moist with an almost fudgy texture, but they were still light.
These cupcakes aren't really made for decorating as they are so moist and even quite sticky to touch on the top of the cake, but I thought I would do some experimenting and try out an icing glaze. I had a search on the internet and found a cinnamon glaze which I felt would compliment the cinnamon, cocoa, raisins and applesauce in the cupcakes. The glaze did add a nice sweetness, spice and crunch to the cupcakes, but I would definitely say it wasn't a necessary addition, and these cupcakes would be fine without any topping.
Applesauce is a useful way of cutting fat and calories in baking as you need to use less sugar and butter when using it. It also makes a moist cake, but if you are looking for something for decorating I would stick to a basic cake recipe which would have a more stable structure.
